In order to make our black gem, we follow the traditional process that we have adopted as our working method. We select the grapes in the vineyard and, after destemming them, put them into a stainless steel deposit, where they ferment at a controlled temperature.
After pressing, the wine is poured into a stainless steel deposit and the miracle of malolactic fermentation takes place again; we thus obtain the clear tones for this red one and we can give it the necessary balance before bottling.
