The Galician rivers Miño and Ulla are currently the only ones in Spain where the lamprey is caught, a little evolved fish whose origin goes back more than 500 million years ago. Although its appearance does not seem very appetizing, the amprea enjoys great fame for its exquisite flavor and was already much appreciated by the Romans, who filled Galicia with 'pesqueiras' to capture this delicacy. In Padrón we keep those of Herbón, behind the Franciscan convent, and very close to those of Pontecesures.
Between January and April the lamprey fishing season opens and it is when the lovers of this peculiar fish sit down at the table to enjoy the many forms of preparation, being the bordelesa and empanada the most common. Both can be tasted in the restaurant of Hotel Scala, which for another year will offer a selection of dishes with lamprey as the main ingredient.
