After a few weeks of tests in our restaurant that we have used to perfect and close every detail, we can show you the project we have been working on in the last months: Rescaldo, the new tasting menu of Asador O'Pazo which is, in addition, so much more than enjoying our culinary creations.

We present, in this way, a menu composed of more than a dozen passes with a particularity that does our purpose unic: all the dishes of Rescaldo, from the starters to the desserts, are prepared with care in our ember under the expert hand of the chef Óscar Vidal. In this way, our entire team, both from the kitchen and from the living room, has strived to synthesize in this new offer all the gastronomic proposal that we have been developing during the last decade in O'Pazo.

For such a special occasion, the management of our restaurant has rounded up the proposal to the maximum and take it one step further, converting Rescaldo into a solidary menu. For this reason, every time you come to eat our menu, you we will be collaborating with the "Árbores de Cinza" campaign in the recovery of the autochthonous forest in Chandebrito, zone 0 of the fires that ravaged Galicia in October 2017.

In O'Pazo we are aware of the importance of the fire to our house, essential to prepare the embers and make each of our dishes. Precisely for this reason, we have chosen such a special name for the new menu, made up of the terms "res", cattle, and "broth", humble and traditional food in our community; that united give rise to a new meaning: rescaldo is the set of small embers that remain sheltered among the ash when the flames are set.

But in addition, in the Asador O'Pazo we have a desire: that rescaldo be a reality only in our restaurant and not in the mountains and forests of Galicia. Therefore, we join the campaign "Arbores de Cinza" launched by the association Galicia Ambiental after the fires that devastated our community in 2017, to which we will donate a percentage for each menu that we serve.

Since the beginning of the campaign, the "Arbores de Cinza" initiative has managed to plant more than 2.000 new trees of native trees in Chandebrito, creating the called "Forest of Memory" in the this town considered zone 0 of the disaster environmental. By 2019, the goal is to continue increasing this number of trees, while informative conferences are offered in different schools in the community. All the incomes obtains with the sale of Rescaldo will be donate to this two causes.
