O'Pazo and the Galicia Ambiental Association, united by the Galician forest
In O'Pazo we are aware of the importance of the fire to our house, essential to prepare the embers and make each of our dishes. Precisely for this reason, we have chosen such a special name for the new menu, made up of the terms "res", cattle, and "broth", humble and traditional food in our community; that united give rise to a new meaning: rescaldo is the set of small embers that remain sheltered among the ash when the flames are set.
