The arrival of August brings to Padrón, one more year, one of the most important gastronomic events in Galicia: the XL Festa do Pemento de Herbón. The festival, declared of tourist interest, is held every year on the first Saturday of this summer month, bringing together hundreds of people who come together to enjoy the good atmosphere and, how could it be otherwise, the unique flavor of these delicious peppers. But for those of you who are unable to attend do not worry, because we have prepared several tips so that no one is left without trying one of the star products of Galician gastronomy.
Where to buy them
The first step is to acquire the authentic Pementos de Herbón that are sold between the months of May and October. For this we must ensure that they belong to the Protected Designation of Origin. Just look if the package contains an alpha-numeric label on which the logo of the Denomination of Origin appears. In addition, the official logo of the D.O.P. Pemento de Herbón. And finally, note that in the commercial identification appears the mention of the Protected Designation of Origin "Pemento de Herbón" and also that it is incorporated that it is the "variedad Padrón". This way we make sure to buy the authentic peppers of the area, which preserve all their flavor.
How to prepare them
The Pementos de Herbón have a multitude of possible preparations. But the traditional way of consuming it is fried. And here comes the first of the doubts, with or without a tail? It is recommended to fry them without it, so that they retain their herbaceous flavor. The key? Remove it with a teaspoon or a blunt-tipped knife without piercing the pepper, so that no oil enters inside. Before frying slowly, they should be washed and then put in olive oil not too hot. Finally, they drain and add coarse salt. It seems delicious!
